Soup season

As soon as Erin announced her Winter blog series Soup and Story Saturdays, I knew I wanted to join in. The surprisingly hard part was not the eating of soup, but the getting pictures of soup!

We eat soup frequently, and often year-round, but getting a good picture turned out so much harder than expected. In part because my tomato soup blended into the terracotta color of my bowls. Oops. With new soup bowls from a local potter, the soups are able to shine.

This week, we actually had soup twice: tomato soup with tortellini and a chicken enchilada that we added the leftover tomato soup and some leftover pasta too. Deliciously savory and comforting, especially when paired with simple salads.

Tomato soup has been my go-to for years. I used to buy canned soup {the good kind!}, and add extra herbs, pasta, or even shrimp. If it’d been a particularly wild day in the Library, I’d pair it with a grilled cheese and Oreos. There’s a “farmhouse bakery” downtown where I regularly meet girlfriends, and they make a tomato bisque that pairs deliciously with sandwiches. Mr. has mastered a fabulous, and ridiculously easy, homemade tomato soup that is on frequent rotation. Tomato soup has become one of those flavors that instantly evokes comfort and good company.

Chicken enchilada soup has also been a favorite flavor in years past, both at home and abroad. When we were dating, one of our favorite take-out spots was McAlister’s and Mr. would often get a cup of the chicken enchilada soup to go with his sandwich. Even during the summer. When we were having car picnics {because dating during the pandemic}. I would tease him for eating soup in the Summer, but it does have the most fabulous flavor. This was a canned soup that we doctored, as mentioned above, and it’s both fast and satisfying.

With Winter officially beginning tomorrow, I predict a lot more soup in our future. We’ve got a couple recipes we want to try {or try again}, and of course the standbys will be revisited often.

  1. Your soups look delish, Rebecca. Tomato is my favorite soup to make, though by far the most popular one I make is Buffalo Chicken Soup. I eat soup year round and could have it every day in the winter!

    • Oooh, I bet Mr would love a buffalo chicken soup! He loves the dip, haha. I like soup year round, except for when it’s really really hot and then I’m like “nope, no way, I don’t even want to turn on the stove” 😉

    • Thank you, they were rather tasty 🙂 Yeah, running the stove to cook something so hot and liquid is not fun in the summer. And we always try to can tomatoes in July/August, when it’s frightfully hot, and have 2 massive canners of boiling liquid going at once … Makes me not want soup for a while, LOL!

  2. My favorite soup is old fashioned potato soup or ground beef chili or new england clam chowder. I can eat soup all year round but mostly on rainy spring or summer day.

  3. Well now I want soup! I love soups, but only a handful — and tomato is not one of them. My favorite is probably lobster bisque, but I also adore butternut squash soup, lentil soup, chicken tortilla soup, chicken and wild rice soup, mulligatawny soup, and French onion soup. I do make a white bean enchilada soup that is delicious, too! Yum. I haven’t had that in a long time.

    • I actually did not like tomato soup until I was in my mid20s 😂 Lentil soup, yum. And 15 bean soup 😋 Mr makes an amazing onion soup, and I rely on that heavily when congestion moves in 🤧 White bean enchilada sounds delicious. Man, now I’m hungry! 🤣
